Theseus usually keeps his distance and uses ranged attacks, while the other one charges towards you and deals heavy area damage. I recommend focussing on one of them, usually the minotaur, because he tries to get close to you and thus is annoying to keep an eye on him.
Normally I’ll kill the Minotaur first, he seems to just hop around more when low. Titan toppler (deflection dash) is great for this fight; as is any wrath boons that allow you to deal damage while immune to damage (Ares or Poseidon ideally, Athena being the next best for this purpose).
